A salumeria is a place that specialises in cured or preserved meat and fish. The term is derived from the Latin word for salt (“sal”) and the Italian word salume, pl. salumi “salted meat”). The salumeria originated in Italy, and dates to the Middle Ages. Perhaps it could be likened to a modern day delicatessens, however, the deli were first founded in Germany in the 18th century and not the Italians.

Some salumerias may offer limited seating or a small area where customers can stand and enjoy their food, particularly in larger cities where space is at a premium. In these cases, it is common for customers to order a selection of cured meats, cheeses, and other products and enjoy them with a glass of wine or other beverage.

What Is Salumi

Again this is just another term for cured meats made from predominantly from pork. Salumi also includes bresaola which is made from beef, it can also include cooked products such as mortadella and prosciutto cotto. It is just a more specific name of charcuterie.

Sopressata

Sopressata is a dry Italian salami that is finely ground. Sopressata gets its flatness from the drying process which consists of putting a heavyweight on top of the salami. Sopressata is a great addition to sandwiches or antipasto boards. It is usually mixed with red pepper flakes which give it a little bit of a kick.

Prosciutto

Prosciutto is a very popular Italian ham. It is a fatty cut of meat that has a buttery texture and is thinly sliced. Prosciutto is made from the hind leg or thigh of a pig. 

Genoa Salami

Genoa salami is a type of salami made originally in Genoa, Italy. Genoa salami is made out of pork, wine, garlic, salt, and black & white peppercorns. Genoa salami tends to be on the greasier side and has a fermented taste.
